Treat Dad Amarula’s African Original Way
Some say any man can be a father, but it takes someone special to be a dad. Show him how much he means the African Original way, with the Spirit of Africa.
When you open that bottle of Amarula and pour him a glass over ice, tell him that in many ways the mystical marula tree is like a father. A great provider, it offers shade and shelter and a whole eco-system for animals living in the wild that savour the exotic, juicy flavours of its delicious marula fruits, indigenous to sub-Saharan Africa.
The trees are not only a source of nutritious food. Its bark, leaves, roots and seeds are also important to local communities.
Few African trees are held in such high esteem by the indigenous people of Africa. Much like the great fathers across the word, the marula tree is respected, revered, loved and celebrated for the natural bounty it provides each day to the children growing at its feet.
Now spoil your dad with a mouth-watering creole-spiced Amarula and mussel chowder. It’s easy to make, looks impressive and tastes delicious.
While you’re cooking don’t forget to mention that Amarula was awarded the title of Liqueur of the Year at the 2012 New York International Spirits Competition.
Creole-spiced Amarula and mussel chowder
Ingredients
30 fresh, scrubbed and debearded mussels
1 onion, peeled and chopped
2 finely chopped cloves of garlic
1 tsp fresh chilli, chopped
3 Tbs butter
2 Tbs olive oil
250 ml dry white wine
1 tsp Cajun spice
1 tin whole peeled tomatoes
1 fresh tomato, deseeded and cut into cubes
2 Tbs lemon juice
125 ml Amarula
2 Tbs parsley, chopped
Method
Sauté the onions, garlic and chilli in the butter and olive oil in a large, heavy-based sauce pan until translucent. Add the wine, Cajun spice, tomatoes, lemon juice and Amarula. Simmer gently for 15 minutes (until the tomato chunks disintegrate). Use a potato masher to break up any additional chunks. Now, take the heat up to high and wait for the sauce to boil. Then add the mussels, cover with a lid, shake the pan around a little, and leave it on the heat for about 5 minutes. Remove from the heat and serve immediately. Garnish with the chopped parsley.
Serves 4.
